Yesterday i made a casserloe called "Eggplant Parmesan" for me and my family and boy it turned out to be quit the adventure! Grocery shoping turned out to be the easy part of the whole process. there wasnt much to that but when i dtarted cooking i realized there was much to learn. luckly i had my mom to help me witht the things i was unsure of. after all it was her that persuaded me to cook this dish because she knew my dad would never eat eggplant if she were the one that had made it ( he agreed to try everything i make).
My first problem i came across was the order of how to do things. the insructions were not clear on what order things were supose to go in so my mom helped me figure out that i shouldnt start the tomatoe sauce before the eggplant was cooked because it wouldnt be ready etc.. The cooking of the eggplant was a process because we discovered our broiler coooks best in the middle so some of the eggplant would be ready to flip and others werent. it got a little confusing about what needed to be cooked and what didnt. we also discovered that we had to cook the eggplant on a flat cookie sheet so that each peice could be laid flat without overlapping. Another thing i realized about cooking is that while some instructions are ment to be taken literal and exactly how it was writen, others can be tweaked allowing you to interpret them your own way or bend the rules a little bit. me and my mom decided it would be better to sprinkle some cheese on the top of the dish :)
Once the casserole was finished it was time to give it a try. My dad decided it wasnt as bad as he had expected it to be but hes just not a fan of eggplant. My mom really liked it as she knew she would, and i was nuteral. I think i have decided eggplant is not my favorite either. I did a little resear on Eggplant to see what kknd of nutritional values it had and i learned the following: Eggplant is low in saturated fats, sodium and chlorestorol, all things that should be low in outr diets. It is high in vitamin C and K, magnesium, and potasium. ive learned that magneseum and potaseum work hand in hand. magnesium maintains the right balance of potasium in the body and potasuim is important for the function of all cells n the body. it is also crucial in the hearts function. Eggplant is also good for wheight loss and maintaining good health. luckly for my mom, she is on the right track. for me i think i will search for other healthy food options.
